The Centre for Eno-Gastronomical Studies at the Institute of Tourism Studies in collaboration with Eatmania, recently hosted the world renowned chef Gabriele Ferron on the 10th & 11th April 2012 for two demonstrative and informative sessions about rice and risotto held at the Institute of Tourism Studies. Gabriele Ferron, also known as the “king of rice” is a rice-master chef and a professional rice-grower. He grows and mills his own rice in Isola della Scala in Verona. Ferron is the world ambassador of rice and is constantly touring different countries across the globe with his rice and risotto cooking techniques. Amongst his various techniques for cooking risotto, the one he is most passionate about is, not to stir the rice whilst cooking it. Chef Ferron presented information about rice growing and processing to the last year chef students and successively demonstrated different methods of cooking the perfect risotto. The students also had time for questions and were presented with a certificate of attendance. Another session was held the next day for the benefit of local chefs and restaurant owners.
