The Institute of Tourism Studies is offering part-time courses that will run during the Academic Year 2008/9. Application Forms are to reach the Office of the Registrar at the Institute of Tourism Studies by not later than Wednesday 1st October 2008. All applications received after the closing date will be filed and considered for the next session. Courses will be organized as soon as there is an adequate number of applicants, however ITS reserves the right not to organize any course.
Food Preparation & Culinary Arts MQF Level 2 (Single Module) The course aims to develop the basic craft skills required in modern cookery. The programme combines practical work, theory sessions and demonstrations all delivered by experienced lecturers. Scheduled to commence in October the course will be held once a week (afternoon session) for 28 weeks. Each session will be composed of 1.5hrs Theory and 3 hrs Practical during the first semester and 3 hrs Theory and 3 hrs Practical during the second semester. Participants must be in possession of the Food Hygiene Licence B. Fee 560 Euros
Food Preparation & Culinary Arts MQF Level 3 (Single Module) The course aims to train students to high level of technical skills to meet the food production requirements of a first class hotel or restaurant. Applicants must be in possession of the Food Preparation & Culinary Arts Single Module MQF Level 2. Scheduled to commence in October the course will be held once a week (afternoon session) for 28 weeks. Each session will be composed of 1.5hrs Theory and 3 hrs Practical during the first semester and 3hrs Theory and 3 hrs Practical during the second semester. Fee 650 Euros
Basic Pasty and Baking MQF Level 2 (Single Module) This course is designed for those interested in acquiring an understanding of the preparation and decoration of pastry dishes. It runs over 14 sessions each consisting of 1.5hrs Theory followed by 3 hours Practical. Participants must be in possession of the Food Hygiene Licence B. Fee 280 Euros
Basic Pasty and Baking MQF Level 3 (Single Module) This course is designed for those who have successfully completed the Pastry and Baking MQF Level 2 and who wish to increase their understanding in the preparation and decoration of pastry dishes. It runs over 14 sessions each consisting of 1.5hrs Theory followed by 3 hours Practical. Participants must be in possession of the Food Hygiene Licence B. Fee 325 Euros
Course in Maltese Cuisine MQF Level 2 (Single Module) For those with a passion towards Maltese dishes. This course will be held once a week (evening practical 3.5 hour sessions for 10 consecutive weeks. Students will take home the food prepared. Fee 230 Euros
Course in Maltese Pastry MQF Level 2 (Single Module) This course is aimed at keeping the Maltese traditional dishes alive. The course will be held once a week (evening practical 3 .5 hour sessions for 10 consecutive weeks. Students will take home the food prepared. Fee 230 Euros
Healthy Cooking Course MQF Level 2 (Single Module) This course is aimed at those who are health conscious. The course will be held on Saturday mornings and is scheduled for 12 practical sessions each of 4 hours duration and two theory sessions in Food and Health conducted by Dr. Mario Spiteri Food and Health Consultant. Students will take home the food prepared. Fee 325 Euros
The Culture of Food in the Mediterranean MQF Level 4 (Single Module) The Institute of Tourism Studies in conjunction with Mediterranean Cultural Encounters Ltd is holding an evening course on the culture and the history of Mediterranean Food based on the publication launched by Mediterranean Cultural Encounters Ltd entitled“Eating through Time: The culture of food in the Mediterranean. The course will consist of 10 lectures and two demonstrations on the culinary preparation of food. The lectures will be conducted by Mr. Noel Buttigieg and demonstrations will be conducted by chef/lecturer Mr. Philip Cauchi. On registration, participants will receive a study pack comprising the publication Eating Through Time: the culture of food in the Mediterranean; the lecture modules, selected readings; and two power-point presentations by Slow Food on CD. A certificate of proficiency/attendance will be awarded to participants. Fee 250 Euros
Certificate in Food Service MQF Level 2 (Single Module) This course is scheduled to commence in October. It runs over two semesters and is conducted in a supervised working and class environment. The aim of this module is to develop a basic knowledge and understanding of food and drink service theory and practice in catering and hospitality. Participants must be in possession of the Food Hygiene Licence B. Fee 300 Euros
Certificate in Food Service MQF Level 3 (Single Module) This course is open for applicants in possession of the Certificate in Food Service MQF Level 2. It is scheduled to commence in October. It runs over two semesters and is conducted in a supervised working and class environment. It provides a broad range of skills appropriate to a person operating as a front line server with some supervisory responsibilities in a typical service outlet. Participants must be in possession of the Food Hygiene Licence B. Fee 340 Euros
Advanced Certificate in Food Service MQF Level 4 (Single Module) This course is open for applicants in possession of the Certificate in Food Service MQF Level 3 and who have a minimum of two years work experience in food and beverage service or who have successfully completed the Certificate in Food Service MQF Level 3 or Restaurant Operations MQF Level 3. It is scheduled to commence in October. It runs over two semesters and is conducted in a supervised working and class environment. It provides a broad range of skills appropriate to a person operating as a front line server with some supervisory responsibilities in a typical service outlet. The certificate will be issued on successful completion of six months practical experience in industry monitored by ITS lecturers. Participants must be in possession of the Food Hygiene Licence B. Fee 350 Euros
Basic Bar Operations MQF Level 2 (Single Module) This course is intended for persons who wish to learn the basic skills needed to operate behind a bar. It is also ideal for persons with previous experience who wish to enter the Hospitality Industry in the Beverage Service Department. The course is held once a week (3 hours duration) for 15 weeks. Fee 185 Euros
Bar Operations MQF Level 3 (Single Module) This course is intended for persons already employed as bar persons who require certification. Applicants must be in possession of Basic Bar Operations-MQF Level 2 and have at least 2 years related work experience. This course is held once a week (3 hour sessions “theory and demonstrations for 15 weeks). The certificate will be issued on successful completion of three months practical experience in industry monitored by ITS lecturers. Fee 240 Euros
Wines, Spirits Educational Trust W.S.E.T (Intermediate) MQF Level 3 (Single Module) This course is designed to provide a broad knowledge in wines, for members of the public, for students and for persons employed in the retail, and in the food and beverage service sectors. Participants have to sit for an examination at the end of the course. The course is scheduled to commence in October and will be held once a week for 8 consecutive evening sessions. Fee 240 Euros
Wines, Spirits Educational Trust W.S.E.T. (Advanced) MQF Level 4 (Single Module) This course is open to persons in possession of the Intermediate WSET Certificate. It is designed to broaden the participants' knowledge of wines. The course runs over 15 evening sessions each of three hours duration and will commence in October. Participants will have to sit for an examination at the end of the course. Fee 420 Euros
Supervisory Skills for Meetings and Conventions MQF Level 3 (Single Module) The course is aimed at people who are already employed in the Hospitality Industry in a Junior or in a Supervisory position and who wish to improve their skills and knowledge in the specific area of the Conference and Banqueting Departments. Preference will be given to applicants in possession of the Certificate in Food Service Level 1 with a minimum of 2 years working experience in the Hospitality Industry. The course runs over 12 sessions (theory) each of 2 hours duration. Participants have to present a project at the end of the course. Fee 120 Euros
Outdoor Catering Supervision MQF Level 3 (Single Module) This course is aimed at people who are already employed in the Hospitality Industry in a Junior or in a Supervisory position and who wish to improve their ability to organize and provide for the different client needs or prospective employees in the Events Department. Preference will be given to applicants in possession of the Certificate in Food Service Level 1 with a minimum of two years working experience in the Hospitality Industry. The course runs over 12 sessions each of 2 hours duration. Participants have to present a project at the end of the course. Fee 120 Euros
Introduction to Supervisory Skills and Techniques-MQF Level 3 (Single Module) This course is aimed for staff employed in a junior position in the Food and Beverage Sector and for those who wish to join the Hospitality Industry at a Supervisory Level in Food and Beverage Service. Food and Beverage Control MQF Level 3 (Single Module) This course is aimed at people who wish to broaden and deepen their knowledge in the specific area of food and beverage control as well as for persons with little previous experience who wish to enter the Hospitality Industry in Purchasing, stores and food and beverage control areas. Applicants must be 18 years of age and must have had previous work experience. Preference will be given to applicants in possession of the Certificate in Food Service Level 1. The course runs over 14 sessions each of 2 hours duration. Fee 120 Euros
Basic Language Courses for the Hospitality Industry MQF Level 2 (Single Module) English, French, German, Italian & Spanish These courses are designed specifically for those wishing to gain a working knowledge/elementary competence in English, French, German, Italian & Spanish. These courses run over 30 sessions each of 2 hours duration. These courses focus on teaching participants how to communicate simply and effectively at a basic level, deal with the grammatical structures needed, pronounce words properly and utilize tourism-related vocabulary in their daily duties. Fee 240 Euros
Food Hygiene Course Category A- MQF Level 2 Single Module Food Hygiene Course Category B- MQF Level 2 Single Module
These are two types of documents available for food handlers involved in the preparation, manufacture, packaging or handling of non-high risk food and wrapped food. These require a document valid for two years. Category "A"are those food handlers involved in the preparation, manufacture, packaging or handling of non-high risk food and wrapped food. These require a document valid for two years. Course duration 3 hours. Fee 12 Euros
Category "B" are those food handlers involved in the preparation or manufacture of high-risk food and retailers and wholesalers that handle open (unwrapped) high-risk food. These require a document valid for five years. High-risk foods include products such as fresh cream, custards, meat (including poultry) and meat products (including sandwiches) egg and egg products (including sandwiches), rice dishes, fish and fish products, cheese and cheese products, milk and milk products and ice cream. Category "B" food handlers include those persons that are directly involved in the preparation of foods such as chefs, cooks, kitchen assistants, bar staff that prepare food, ice cream and confectionery manufacturers and sellers, dairy products processors/manufacturers, food handlers working in fish processing and meat products processing plants. Accommodation Operations and Services Housekeeping MQF Level 2 - Single Module The course aims at reflecting the knowledge and skills required for anyone currently working within the Housekeeping Department in the Hospitality Industry. The course will be held once a week for 15 consecutive 3 hour sessions. Fee 210 Euros
Reception Operations and Services Front Office MQF Level 2 Single Module This course aims at reflecting the knowledge and skills required for anyone currently working within the Front Office Department in the Hospitality Industry. The course will be held once a week for 15 consecutive 3 hour sessions. Fee 210 Euros
Room Attendants Course MQF Level 1- Single Module This course is aimed at providing applicants with the necessary knowledge to enable them to develop an understanding of the various methods of cleaning and the various measures taken for the care of the different surfaces and finishes used in the Accommodation Sector within the Hospitality Industry. The course runs over six sessions of 2 hours duration each. Fee 100 Euros
Pest Control Awareness and Integrated Pest Management MQF Level 3 Single Module This course is designed to provide awareness of basic pest control issues as well as to encourage a continuous proactive approach within the Hospitality Industry. People bearing such a responsibility within the industry will be in a position to ensure that services provided by the contractors are commensurate to the set standards. The course also bears international recognition. It is aimed particularly at members of the Hospitality Industry with special focus on Safety Officers, Chief Engineers, Maintenance Managers, Executive Housekeepers and Housekeeping Supervisors. The course runs over 15 sessions each of 90 minutes duration. Participants will have to undertake a practical assessment followed by 50 multiple choice questions. Fee 110 Euros
Opera PMS System Module Basic MQF Level 2 Single Module This module is designed for receptionists and reservation clerks who have little or no experience with Opera. 12 hours of hands on experience using the Opera PMS System in a controlled classroom environment. Duration: 4 sessions of 3 hours each. Fee 90 Euros
Opera PMS System Module Intermediate MQF Level 3 Single Module This module is aimed at : Assistant Front Office Managers, Shift Supervisors, Reservations Managers/Supervisors, with a working knowledge of Opera or Fidelio. 6 hours of hands on experience using the Opera PMS System in a controlled classroom environment. Duration: 2 sessions of 3 hours each Fee 60 Euros
Health and Fitness MQF Level 3 Single Module This course is aimed for Gym Instructors or prospective GYM Instructors who are seeking certification for employment purposes. It is aimed at creating an understanding of the human anatomy and physiology. Participants will be able to create a health and fitness programme for a variety of clients including sufferers of diabetes, asthma, arthritis etc. The course will be held once a week for 15 consecutive morning sessions. Fee 60 Euros
Aerobics and Aquarobics MQF Level 3 Single Module This course is intended for persons who are 18 years of age and who wish to become instructors in this field and are already music and exercise participants. Applicants must be in possession of the Health and Fitness Certificate. Duration: 15 consecutive morning sessions held once weekly General Conditions: Applicants must submit a Curriculum Vitae with their application including their educational qualifications and work experience. Letters of reference may also be attached with the application form. Applicants suffering from any medical condition/allergy which could influence health and safety during practical sessions should furnish relevant medical documentation. Participants are not allowed to park their vehicles within ITS grounds unless prior authority in writing is obtained. It is recommended that applicants for courses involving food preparation and food and beverage service be in possession of the Food Handlers License. Smoking within the Institute of Tourism Studies is not allowed in conformity with the Smoking in Public Places Regulations 2003. Application forms for courses commencing during the first semester of the academic year 2008/9 are to reach the Office of the Registrar at the Institute of Tourism Studies by Wednesday 1st October 2008. All applications received after the closing date will be filed and considered for the next session. Courses will be organized as soon as there is an adequate number of applicants. ITS reserves the right to change the above mentioned courses or not to organize any course if the number of applicants is not adequate. The respective course fees are to be paid in full by applicants before the commencement of the respective course. Participants will be refused entry to the course unless they pay the respective course fees. Participants for part-time courses are to wear smart attire when on ITS Campus. Jeans, t-shirts, sports shoes, sandals, short trousers are not allowed. All participants will be refused entry at ITS unless they adhere to the ITS dress code.
